Τζατζίκι = Tzatziki (dzadzíkji) recipe

A very famous Greek sauce recipe, also well-known in the East and Middle-east, often served with grilled meat or the authentic Greek gyros (jíros).

This recipe is as simple as it gets:

500 grams of authentic Greek Yoghurt (choose a Greek company yoghurt if possible) 2 cloves of garlic (or according to taste) 2 tablespoon of Greek virgin olive oil 1 cucumber peeled and grated (drain the water from the cucumber after grating it) 1 ½ tablespoons of vinegar ½ a teaspoon of salt (or according to taste)

A pinch of pepper Optional: ½ a teaspoon of spearmint or parsley

Start by crushing the garlic into a fine paste. Then grate the cucumber and drain it from water. Put some pressure with a tool or your hands so that most of the water comes out. Put the grated (and drained) cucumber in a bowl with the rest of the ingredients! Mix all the ingredients and leave it for an hour at least in the fridge, so that the flavors are well-blended. Now take your tzatziki and accompany it with some grilled meat or some nice homemade fried potatoes. Enjoy!!!

Hint: Use an authentic Greek yoghurt since other yoghurts might be too runny for tzatziki. If you cannot find Greek yoghurt, then it is better to buy a form of fresh soft cheese with reduced fat if available in your country (for example fromage frais, quark or of similar consistency and sour flavor -pick natural flavor always- etc.).
